My insulin doses have increased slightly. I gained weight going through menopause, so insulin resistance from the extra weight/fat could be to blame. I say this because as I slowly lose the weight my insulin needs decrease. So, I am confident that this is the cause.
As for my diet, I eat just about everything. I do try to limit high calorie dishes except on special occasions, but I have always done this. I eat plenty of fruit and veggies, legumes, and low fat meats. I love cheese of all kind and whole grain breads - - the more fiber the better!
I have no cognitive issues.
