I eat and count my carbs, staying away from sweet foods like ice cream, milk (dairy) but do eat cheese once in a while. I try to eat little protein d/t kidney concerns plus protein digests slower than carbs so my glucose increases l8r with more protein.
I also try to keep my carbs at 30 to 45 per meal. I wait 15 minutes after my insulin b4 I eat.

I keep and eye on my carbs as well. However, I still eat what I want. Moderation is key with most things. I'll eat a cookie, not a whole package of cookies, portion control is something some people aren't taught...
I've been type 1 for over 10 years now. It's really taken me years to adjust, re adjust and re adjust again to managing it on a daily basis as I age. My diet pretty well stays consistent with simple light eating emphasizing the right fats and proteins and keeping the carbs and sugars within reason. My biggest thing is exercise. I try to walk/hike weather permitting every chance I get which is 3-5 times a week in the local. To burn carbs and sugars naturally and most importantly it's good for my mental health which can wear and tear you with having diabetes. Everyone is different. Group forums like this are great.
